I have worked with holstein cows for several years now, and from my experience, temperment varies from cow to cow. They are mostly nervous around humans, though some of them are quite friendly and enjoy being scratched and petted.
Holsteins are relatively calm, but most do have a slightly nervous temperament, especially when pushed or excited. Holstein bulls, however, are more aggressive and dangerous than cows are.
The Holstein is the classic black-and-white dairy cow.
Friesian horses are known for their gentle and friendly temperament. They are typically calm, willing, and easy to work with, making them popular choices for pleasure riding, driving, and dressage. They are also known for their intelligence and strong bond with their owners.

Boston Terriers have a very kind and friendly temperament. They are the type of dogs that will get along with your children and your family easily. They are loving dogs.
No steroids are given to dairy cows.
Black Clydesdales I think Hammett's black horses, which are included in the 'Some Kind of Monster' documentary, appear to be of the 'Friesian' breed. Black is not a typical colour for a pure bred Clydesdale (Scottish heavy horse), unless of course part bred.
The collective noun for cows (of any kind) is a herd of cows or a herd of jersey cows.
Cows make milk from eating grass.
Holstein: Known for their high milk production, Holsteins are the most common dairy cow breed. Angus: Popular for their high-quality beef production, Angus cows are known for their marbled meat. Jersey: Jersey cows are small in size but produce milk with high butterfat content, making it ideal for cheese production. Hereford: Hereford cows are a dual-purpose breed, valued for both their beef quality and easy calving abilities.
Milk gets evaporated afterwords; cows don't evaporate it.
They can be. But the cows use their tails for flyswatters, so it would be kind of mean.
