This can mean a a lot but first and foremost,when a guy notice that you deleted him in fb mean that either he has few number of friend or he is stalking over your account. :)
Next when you say that he doesn't really know is a odd cause how you know he doesn't really know you??if you refer knowing some one is depend on knowing you in real life then he don't really know you when u say so.But if u define knowing someone as in knowing your details,preference,style,activity and so on,you might be surprise how much he know about you. that would be the case he is stalking over your account i guess.
so now he is angry when u delete him can mean he stalk you due to a crush over you,admire over your style and just a stalker,haha.
the second case is just he got too few friend in his friend list and feel dejected over your delete.
