From what I fine out, on a average you should get around 30 pints per bushel. It can vary between 28-32 pints.
In a 25 lb Bushel it should yield when shelled 7 to 9 lbs.
A decent yield of purple hull peas is 100 bushels per acre. It takes 30-60 minutes to harvest a bushel, and one person can harvest between 12 and 20 bushels of these peas in a day.

Roughly two dollars a pound in the shell. So, around 20 pounds of peas in the shell per bushel should bring around 40 dollars a bushel.
I'm not sure about a gallon but I am currently growing purple hull peas and I have been selling then by the bushel and have been getting $18 for unshellled and $22 for shelled. Some people in my area (Alabama) have been getting as much as $24 and $25 a bushel. Hope this helps......Lori :)
