If you are asking about the American Civil War, there were no Hessian units at all.
In the American War of Independence, they wore blue, Prussian-styled uniforms, and either a tricorne, fusilier cap, or grenadier cap. Hessian riflemen (jeagers) wore green coats instead (with a tricorne)

Most soldiers in the American Civil War came from the Northern states, particularly states like New York, Pennsylvania, and Illinois, where large populations and industrial resources facilitated recruitment. In the South, soldiers primarily hailed from rural areas and agricultural communities, with states like Virginia, North Carolina, and Georgia contributing significant numbers. Many soldiers were motivated by regional loyalty, economic factors, and in the South, the defense of their way of life and slavery. Overall, the war saw a diverse mix of backgrounds, including volunteers and conscripts from various demographics.
The cracker-like biscuit commonly eaten by soldiers during the Civil War is known as "hardtack." It was a simple, long-lasting food made from flour, water, and salt, designed to withstand harsh conditions and provide sustenance for troops. Hardtack was often hard and stale, requiring soldiers to soak or soften it before eating. Its durability made it a staple in military rations during the conflict.
A uniform, just like other soldiers...
Under the Laws of War, soldiers dress in uniform. The uniforms can be anything--you could dress your army in blue jeans and work shirts, like the Navy did--but they have to be recognizable as the uniform of that army.
Hessian is a name of a fabric like crude sack-cloth.

The ideal Confederate uniform was either a beechnut brown, or grey. It looked similer to the Union uniform, though adapted to Rebel classifications. Many soldiers did not own real uniforms, as the Confederate government was unable to supply all of its soldiers with complete uniforms. Many soldiers just wore their own clothes. Some took the uniforms of dead Rebel soldiers, after a battle or skirmish, for their own use. This was common especially when one was in need of shoes, as many soldiers had to go barefoot as the War progressed.

The Roman soldiers fought in the civil wars in Italy because at the time of the civil wars, the legionary swore his allegiance to his general, not to the emperor. (No emperor at the time, anyhow) If someone like Caesar or Pompey ordered a battle the soldiers would obey because of their military oath.
