Instruments strung with thicker (heavier gauge) strings produce more volume and improved tone. However, the string tension is increased which makes the guitar a little harder to play.

Much depends on the correct set-up of the instrument - for example bridge height and neck adjustment via the truss rod. In general, people who want to be able to bend strings easily go for lighter gauge (thinner) strings.
