It dissolves and forms carbonic acid, by:

CO2 + H2O ---> H2CO3

This is an important part of keeping your body fluids at a constant pH of 7.4. If you hyperventilate and "blow off" CO2 , your pH goes up (there's less acid) and bad things can happen.
