Why does the rainbow have so many colors?

Rainbows display every color in the visible spectrum of light. When sunlight hits rain droplets, it causes the light to scatter into each of its individual color components (red, orange, yellow, green, blue, indigo, and violet). The same thing happens when light shines through a prism.

The rainbow's appearance is caused by dispersion of sunlight as it goes through raindrops. The light is first refracted as it enters the surface of the raindrop, reflected off the back of the drop, and again refracted as it leaves the drop. The overall effect is that the incoming light is reflected back over a wide range of angles with the most intense light at an angle of 40°–42°. The angle is independent of the size of the drop, but does depend on its refractive index. Seawater has a higher refractive index than rain water, so the radius of a 'rain' bow in sea spray is smaller than a true rainbow. This is visible to the naked eye by a misalignment of these bows. The amount by which light is refracted depends upon its wavelength, and hence its colour. Blue light (shorter wavelength) is refracted at a greater angle than red light, but because the area of the back of the droplet has a focal point inside the droplet, the spectrum crosses itself, and therefore the red light appears higher in the sky, and forms the outer colour of the rainbow. Contrary to popular belief, the light at the back of the raindrop does not undergo total internal reflection and some light does emerge from the back. However, light coming out the back of the raindrop does not create a rainbow between the observer and the sun because spectra emitted from the back of the raindrop do not have a maximum of intensity, as the other visible rainbows do, and thus the colours blend together rather than forming a rainbow.

Why is white vinegar considered a solvent?

Vinegar consists of a mixture of acetic acid and water. Acetic acid is formed from the fermentation of ethanol and acetic acid bacteria, a bacteria which occurs naturally.

Acetic acid is classified as a polar protic solvent. It is similar to water and ethanol, which are also solvents. It has the capability to dissolve salts, sugars, and oils; and is used in industrial applications due to its dissolving abilities.

Acetic acid is a main contributor to the formation of chemicals used in paints and adhesives.

White vinegar, due to its acidic properties, is a good cleaning agent. It can dissolve mineral deposits, and cut through oils and grease.

How do you make a delicious cheese cake?

For the base

100g/4oz plain chocolate digestive biscuits, crushed

50g/2oz butter, melted

For the cheesecake

150g/5oz plain chocolate, broken into pieces

700g/1½lb full-fat soft cheese

225g/8oz caster sugar

½ tsp vanilla esence

2 size 2 egg

Then;

Preheat the oven to 160C/325F/Gas 3. Lightly grease a 20cm/8in loose-bottomed cake tin or spring release tin.

Mix together the ingredients for the base and press into the prepared tin.

For the cheesecake filling, melt the chocolate in a bowl over a pan of hot water. Cool slightly.

Measure the cheese into a large bowl and beat until soft. Add the sugar and beat again until well mixed. Beat in the vanilla essence and then the eggs, one at a time. Spoon half the cheese mixture on to the biscuit crust, separating the spoonfuls. Add the melted chocolate to the remaining cheesecake mixture and stir well to mix. Spoon this mixture in between the cheesecake mixture already in the tin. Swirl the top to give a marbled effect.

Bake the cheesecake in the preheated oven for about 30 minutes or until the cheesecake becomes puffy around the edges but it still very soft in the centre. Turn off the oven but leave the cheesecake in the oven to cool.

Chill well and then loosen the cheesecake from the sides of the tin using a small palette knife. Serve well chilled.
