Can you substitute Cooking oil instead of shortening?

Nope you can't. Despite the fact that both are oils, they have different refractive indexes, which mean that they refract light differently. That means what you'll see in the microscope would be different. Cooking oil is made from purified fats of a plant origin, while immersion oil is similar (or is the same) to mineral oil. :)

How much lemon juice do you get from 1 medium lemon?

It depends on the size of the lemon, but, on average, about 2.5 - 4 tablespoons ( i think grams are for dry measures.. ) of juice from one lemon. To get the most juice out of a lemon, make sure it is room temperature

-----

You can get about 2 tablespoons of lemon juice per average lemon - it will change depending on the lemon itself: it's size, it's ratio of skin to pulp, etc.. A tablespoon of lemon juice will weigh pretty much the same as a tablespoon of water; the extra chemicals in it won't change the results very much.

A tablespoon of water weighs 14.79 grams, so two of them get you close to 30 grams.

By the way, grams can be used to weigh anything, they are not limited to solids or liquids. If you can weigh something, you can count the grams (or kilograms). Professional bakers tend to weigh everything, from flour to butter to oil to water.

Yes. However, if you plan on chopping the cranberries, it is far easier to use frozen ones because you can simply throw them in a food processor. They will slice perfectly and not just squish like fresh ones will. I buy fresh bags but always freeze them before using them.

Can you use an extra egg in place of the oil in a cake mix?

No. If a cake mix calls for oil, an extra egg instead of the oil will not give good results. The oil is to give the cake moistness, so an extra egg will not only make it heavier and more dense, but it will also be very dry.

To make pancetta, you will need a fresh pork belly. This is the same cut of meat used to make bacon. Trim the pork belly into a square-ish shape. Rub it with a dry cure consisting of salt, sugar, spices, etc. Let cure in the refrigerator for 7-10 days, turning every day. Rinse off cure and dry thoroughly. Roll the pork, and tie with butcher's twine. Hang in a cool, dry place for 15-20 days. Slice, cook and enjoy.

Is evaporated milk the same thing as condensed milk?

Not exactly. Both are forms of concentrated milk in which roughly 60 percent of the water content has been removed. The difference lies in the sugar content; condensed milk is sweetened and evaporated milk is unsweetened. Condensed milk is thick and rich, often used in baking and as a sweetener in tea or coffee. Evaporated milk is used in recipes that call for a creamy texture but no added sweetness.

What can you use instead of powder milk in a recipe?

It depends on whether the recipe calls for powdered milk dissolved in water, or just the powder.

If it is dissolved in water, then yes, you can use real milk instead. However, you're going to have to add a little sugar or vanilla to get the same taste, because powdered milk is a little sweeter than regular.

If the recipe calls for the powder only, I wouldn't recommend substituting it. Think about it - with the powdered milk, something dry gets added to the recipe. With regular milk you'll probably water it down.
