  • 1/2 c Orange juice concentrate
  • 2 tb Oil
  • 1 1/4 c Rice flour
  • 1 1/2 ts Cornstarch-free baking powde

CINNAMON-TOPPED MUFFINS: Combine 2 tablespoons sugar, 2 teaspoons all-purpose flour, 1 teaspoon cinnamon and 1 teaspoon melted butter or margarine. Sprinkle over muffins before baking.

Add to flour mixture. Mix until just blended. Spoon into 12 2 3/4 muffin tin cups greased with additional avocado oil. Bake in a 375 degree F oven for about 20 minutes, until just springy to the touch. Serve warm.
