Sauces and Gravies

Sauce derives its name from a Latin word meaning salted. Sauce is used in different countries in different ways but has normally the same thin consistency. Sauces can be served hot or cold and can be made from a variety of ingredients more well known are mint sauce and tomato sauce. Gravy on the other hand is usually made from the juices from cooked meats incorporating flour and milk to make a thicker gravy to accompany meats such as roast beef, pork and chicken. Gravy is coloured brown by the use of sugars contained in the meat juices that are caramelized to a brown colour. Gravy is then thickened with flour and butter known as a roux. Not all sauce contains a roux such as apple sauce which is often served with roast pork. Although we might think they are the same both sauce and gravies can be made and used in totally different ways. One sure thing no matter sauce or gravy, they both add to the flavour of the dish being eaten. Did you know a chef, who is solely responsible for making sauce in commercial kitchens is known as a "saucier."

How do you make old fashioned biscuit gravy?

Pour enough oil in a 9" frying pan to just cover the center of it. You may substitute a half a stick of butter or margarine, or clear bacon drippings. Pour in 2 or 3 heaping tablespoons of bleached white all purpose flour. Mix oil and flour until all the flour is dissolved in the oil and there are no lumps. Add oil if needed. Bring heat to medium. Add half a cup of milk, cream, or half and half. Whisk. Keep whisking occasionally until mixture begins to thicken. Add more milk and whisk. Keep adding milk and whisking until the gravy reaches the desired consistency. You may add a touch of chicken broth at this point, but not so much that you clarify the gravy. You may now add whatever you want to the gravy; little white onions, cooked sausage, bacon bits, chipped beef, sauteed onions, etc. Season to taste. Some seasoning suggestions: garlic powder, onion powder, white pepper, lemon juice, honey. Don't forget to salt it. Cooked egg whites (2 eggs) make a good whitening agent for gravy when liquefied in a small food processor and added in with the milk or cream. To make the yellow colored chicken gravy like you see in diners, just add a dash of turmeric. Bon appetit !

2 tbsp butter, melt in pan on medium heat. meanwhile whisk 2 tbsp white flour or cornstarch in 1 cup of milk. slowly whisk flour/milk mixture into melted butter. Whisk on medium heat until mixture starts to thicken. You may add more milk little at a time to thin. Remove from heat continue to whisk so lumps don't form. The secret to lumpless gravy is whisking the flour into COLD milk and then adding to the butter. Seasonings above all sound good!

How can canned nacho cheese sauce be preserved once opened?

About 2 years.

Look on the jar or can, there should be an expiration date. Many people don't realize that canned/jarred foods have an expiration date on them. Even foods such as canned vegetables, evaporated milk, etc. have expiration dates on them.

Also, always check the can for signs of bulging, especially on tomato products. If there is even the slightest sign of bulging, THROW IT OUT! Botulism is the most dangerous form of food poisoning there is, and is more common with tomato products.
