Where in the world are you talking about? In America, people grow up to eat meat. The vegetarian % in America is rapidly going up. It's currently around 3% still however.
If you traveled to India, you would meat very few people who were not vegetarian however. So it depends where in the world you are talking about.

Pescetarians, transitional vegetarians, and semi-vegetarians are not vegetarians. People who eat flesh foods or byproducts of the meat industry of any kind do not qualify as a vegetarians.
One becomes a vegetarian only by giving up all flesh foods. Pescetarians, transitional vegetarians, and semi-vegetarians are misnomers and used to make people feel good about being something they are not. Until a person in one of these pseudo-categories gives up meat completely, they are simply selective meat-eaters.

Although cutting out meat would reduce protein intake from meat sources, often eating eggs and cheese and pulses rebalances the diet. More of an issue is iron and B12, and when vegetarians become unhealthy it's probably because they haven't made the changes to their diet to get enough protein, iron and B12. Any exclusion diet must be changed to allow for the item being excluded.

Like any "diet" you can eat on a budget or splurge. It depends on your shopping habits and cooking skills/preferences. It CAN be expensive if you want to just "substitute" everything an omnivore might eat with store made vegan alternatives. Those are pricey. On your own, fruits, vegetables, nuts and grains are not as expensive as buying meat, milk, eggs, etc. Shop for what fruits/vegetables are in season. Buy your grains in bulk. Make your own "veggie burgers" or other alternatives.
What can you use instead of chicken for vegetarians?
There is egg replacer for cooking, and try a scrambled tofu recipe (Neal Barnard's Food For Life). Focus on eating new foods instead of trying to replicate old ones (you never can, anyway). Some vegetarians eat eggs (like myself); we are called "ovo-vegetarians" or "ovo-lacto-vegetarians".
