He was tired of Ralph and his "rules" and he wanted to make his own group. He urged to be a leader and this was the only way he thought he would achieve that. Breaking away from the group symbolizes the last remains of Jack's civilized manner decaying. The beginning of the break down of society
It is the pig's head cut off by jack, transformed from a loving pig to a creepy horror. The flies were buzzing around the head, making the pigs head the Lord of the Flies.
