The mean or more properly the "arithmetic mean" of a sample will
eventually approximate the mean of the distribution of the
population as the sample size increases. If the population
distribution is skewed (not symmetrical), the mode and median will
not provide an estimate of the mean, even as the sample size
becomes large.

### Why is it only possible to estimate the mean median and quartiles?

In reality, a statistician never really has ALL the data. The
data is instead taken from a sample of the whole population. If
this sample is representative of the entire population, then any
statistics based on the sample should be good estimates of the
whole but probably not a perfect match. Of course the more data you
get from the whole population the better the estimate, but it will
always be an estimate unless you census the enitire population.

You may be most familiar with the normal distribution (the
Bell-shaped curve). The mean, mode and median of this distribution
are all the same because it is symmetric. If, however, you take a
sample from a distribution that is asymmetric in some way then the
mean, mode and median will differ. You would need to decide which
of these more effectively characterises the population. Then you
would compute that descriptive statistic.

average salary is a pretty generic term and does not tell you
how the number is computed. Usually, but not always, it would be
the sum of the salaries divided by the number of salaries. This is
known as the mean. The median salary is the "middle" value. That is
to say, if you listed all the salaries from lowest to highest, the
median would be right in the middle. A more precise statistical
definition might say it is the value that separates the higher half
of a sample or a probability distribution from the lower half. When
you say average, the might indicate the mean salary, but we don't
know for sure. The mean is what I described in the first
paragraph.
