This is a short answer. Obviously it will be GTA5. I don't have the game, but what I have heard and seen in magazines is that you will be able to do what you want. (for real) Like traveling to places other than 3 islands. (like vineyards)
Also you get planes unlike in GTA4 you just get to see them. There is a nice selection in big and little boats in GTA4 but there is no little little boats like the jetski you get in GTA5.
