My 1987 Chevy Celebrity with 2.8 V6 was doing the same thing. I cured the problem by replacing three dead fuel injectors.
A good tune-up will probley do the trick.
The Celebrity was replaced by the all-new Lumina.
Pull the glove box out then reach underneath and push up the plastic tab to release the stop. The glove box will then pull on out
check the air flow sensor at or near the air cleaner. could be unplugged or faulty, engine will run a few seconds then stop.
1990 was the last year a Celebrity was produced. It was as a Wagon ONLY, along with the Pontiac 6000. The celebrity was produced in a two and four door along with a wagon too. 1982-1983: coupes and sedans 1984-1988: coupes and sedans and wagons 1989: sedans and wagons 1990: wagons only
Possibilities: Cooling fan not working. Low on coolant. Clogged radiator, radiator hose or block.

check for vacuum leaks that wull usually cause this problem
check your fuel pressure.

Could be a faulty TCC (Torque Converter Clutch) solenoid. Remove the TCC fuse and see if the problem goes away.
