My workmate & I wondered about this a few days ago. I chewed a piece of uncooked skin of a fully ripe banana and found the taste to be fairly bitter. It is fibrous. The mouth is left feeling dry. The overall taste is not pleasant. I did not want to eat more of it. I did not swallow it. I tried steaming some for 4 minutes. The fibrous element almost disappeared. The taste did not improve, however it smelt good. Strong smell of banana icecream. I decide not to swallow it.
