That depends on what you are saving them for. If you are referring to nickels out of pocket change here are a few to look for.

Some 1942 and all of 1943-1945 nickels are made of a silver alloy (35% silver) the value of the silver far exceeds the value of the coin. The 1950-D had an unusually low mintage and caries a premium over other dates of that era although not a high value item by any means. There are some varieties that with a lot of searching can still be found although they are increasingly rare in circulation. 1949-D over S, 1954-S over D, 1955-D over S are the ones that come to mind. After that the nickel was produced in such huge quantities and hoarded by the roll that supply has far exceeded demand and there is little in the way of anything to keep aside.

1942-1945 Nickels with a large mintmark (P, D or S) over the Monticello on the reverse are 35% silver and are known as War Nickels. These are worth several times face value (about $1.30 at the time of writing) and should be saved. Nickels prior to the Jefferson nickel series (such as Buffalo or "V" nickels) should be saved as they have a premium over face value. Proof nickels should be saved as should high-grade examples from the 1950s and before.

They're worth saving as much as other pocket change. Most nickels aren't rare enough to be valuable beyond face value, though the metal value is just slightly higher (somewhere around 5.5 cents, but it's illegal to melt them for bullion).

There's no blanket answer. You have to know the rarer dates and mint marks. In general, though, most nickels minted since 1946 have little or no added value in average circulated condition. You'd have to find a nickel minted before the mid-1950s that shows very little wear for it to be worth extra.

One exception to the above is a 1950 nickel minted in Denver; it'll have a small "D" to the right of Monticello on the back. These had a relatively low mintage and retail for anywhere from $5 to $12 in circulated condition, depending on wear.

There's lots more to choose from among earlier nickels:
