Meat is generally cooked to under 200 degrees and candy's hard crack stage is 300-310 degrees, so the standard digital probe probably cannot handle the intense heat. And the probe wire might hit the burner. And the sugar may seal the probe beyond your ability to clean it.

A stem thermometer is used to measure the internal temperatures of foods, especially meats. Stem thermometers have a "stem" that is inserted into the food and a flat round "face" at the top that may be digital or dail. It is a machine that fries doughnuts. At its most basic form, this is simply a container with oil in it where doughnuts are fried. However, these machines can get more complicated, sometimes even including oil vaporators, conveyor belts, and can resemble miniature factories.
probably not the best idea. the meat can break in the deep fryer and even if it stays in form the exterior will burn as the interior undercooks and the patty becomes infused with oil and trans fat. tastes really bad from my experience. try grilling its healthier and tastes much better by far!
