If you have an older one with a standing pilot light, one that is on all the time, you probably can. I've been told that the newer ones with electric ignition are a problem. They have electronic parts that don't like generators and will short out the circuit boards. This is from a Heating and Air guy so I tend to believe it.

Yes you can do that. I had an oil fired furnace that also heated the hot water in a coil inside the furnace. I got an electric hot water heater and had a plumber disconnect the coil in the furnace and hook up the electric hot water heater. No problems after four years.
