I wouldn't advise taking the two together unless your psychiatrist says otherwise since they are both essentially identical in their effects. The biggest difference is that olanzapine lasts at least 24 hours, while quetiapine only lasts 6-8 hours. If you don't have a tolerence to either one of the drugs, then I would strongly advise against taking the two together since it will knock you out.... hard.
