Apparently yes, silkworms can/will eat beetroot leaves but not if they have already been eating mulberry leaves. But this is hearsay for me. I have raised them on lettuce leaves from start to finish, however.

Keeping Silkworms can be a hard task. Silkworms do not eat lettuce, their preferred diet is White Mulberry Tree Leaves, Osage Orange Tree Leaves.

In an emergency, yes. But they need mulberry leaves to survive in the long run, so they shouldn't eat lettuce for too many days.
