hello there
actually iam not sure about that ,,,, they didnt teach us about honey and DM in med school,...
however it varies according to the composition of honey it self
for ex ...
in most types of honey
glucose level is about 35%
fructose is about 55
other ( maltose >>>etc ) 10 %
but we have certin type of honey which contains about more than 85% of its compsition is fructose
and as we know that fructose dose not need insulin in order to enter the cells of our body
all in all it depends on the type of honey it self
the more pure the honey ... the more fructose
some studies do not mind at all to use honey in type 2 DM
while others do mind use honey at all ( all type are not prefered in those studies)
that's what i have heared,, read and knew about honey and DM type 2
try to search more about that

Generally, it is safe for type 1 diabetics to eat honey. As long as they keep their blood sugar levels within tolerances, they usually can eat whatever they like (in moderation, of course). It is a good idea for any a type 1 diabetic to consult with their health care provider before any major diet changes.
Diabetics can eat and drink almost anything they want, as long as they keep a constant monitor on their blood sugar levels.
A type 1diabetic can eat ANYTHING.
