It's like opening a door in a small, hot room. As the door opens, the hot air will go out and the cool air will go in making the process a little slower. Besides, there's a lot of steam and it's annoying.

Some are meant to be cooked without a cover. Check your recipe. If it says to top the casserole with breadcrumbs, cheese, or another topping you probably should cook it uncovered. The clue is in the actual type of cooking method i.e. casserole. A covered dish with lid on, which the food is baked in and the same dish used to serve the baked food. Therefore it would be lid on if you wanted to make a traditional casserole dish.

Many restaurants use a microwave and that simply ruins the quiche. I have not tried this method on quiche but it works great (without foil) when reheating pizza. I just had quiche in a restaurant who served microwave reheated quiche. It was terrible. The eggs were slimy and the crust was mushy. Yuck.
