It might not exactly spoil with mold and bacteria, but it might have oxidized and changed color and flavor to the extent that it isn't good any more.

Can saltine crackers spoil?

No they cant spoil because they're dry products but if you leave them out they will get stale!! Not true. I just ate some crackers that hadn't been opened but had an expiration date of 14 months ago (which I didn't realize until after the fact). They were crispy and appeared okay, but tasted like they were rotting. I smelled them, and there's no doubt there was something growing in them.
