No carrots can not continue growing after being frozen.....the freezing cycle kills off the cells and the nucleus(main cell) but the vegetable still remains fresh! this is the case with most veggies.

Yes.

Usually, most fluids can be frozen solid in a common freezer. But think of it this way: Can carrots be frozen? I think they can hence the juice of carrots can be frozen aswell. Although I think that it would take longer to freeze to a solid state than normal water. The frozen juice makes excellent soup.

To control the breakdown of enzymes and undesirable chemical changes which occur in frozen vegetables, it is strongly recommended that all vegetables be blanched prior to freezing. When properly prepared, frozen vegetables such as carrots can be frozen for 12 to 18 months. Since freshly squeezed carrot juice cannot be blanched, it's freezer shelf-life will probably be much shorter.

It is more beneficial though, if the freshly generated carrot juice is consumed quickly rather than frozen.

Yes, carrots can absolutely be frozen. I do recommend however, partially cooking or fully cooking the carrots first before freezing.
