If you have a mincer, you can pass apple pieces through the mincer. That will produce a level of juice plus the minced apples. You can then either use the apple mince to cook with, or press the minced apples thru a sieve and extract further juice. Food processor should work as well but you would need to go to something finer than a sieve, such as the cheesecloth that BuckyTom suggests above.

I can think of two ways to make cider without a press.

The first is to make small quantities using a juicer. This uses a grater and centrifuge to extract the apple juice.

The second is to use a series of pomace pumps and filters on a small industrial scale. The apples are minced in a scratter or grinder and then fed into a large bore pump, with the resulting finer mince fed into the next size down. All the juice from each stage is accumulated and coarse filtered.
