Flour contain a lot of protein.
I mix with cold water and wheat plus a lil bit of yeast and salt.
When you let it stay overnight, then you might get a slightly thicker mixture.
It should not do any harm as such to the actual mixture or the consumption of it as long as it is stored in a cold place (refrigerator +5c at most).
