Its the cold start fuel sensor giving you troubles. Its flooding the engine with fuel.
It could be the fuel pump, the starter, the alternator, the battery, the spark plugs, the spark plug wires, the fuel filter, a fuel line, a cam sensor, a crank sensor. There are so many different reasons. the bes thing to do would be to bring it into your local mechanic and have them diagnose it for you. That way they can tell you exactly why it won't start, what it needs, and how long and how much it will cost to fix it.
To change a fuel vapor sensor on a 1997 GMC Sonoma you need to disconnect the wires that are holding it in place. Next, remove the old sensor and replace with the new one.
More likely to be the fuel pressure regulator, or a dirty fuel filter. Or if you are over 80k miles you might have plugs/wires that need replaced. Usually a MAF sensor will not cause that *only* at start but rather the whole time the vehicle is running.

Absoutely, it may be the culprit of the irregular idle. Start with the simple stuff first: Spark Plugs, then Spark Plug Wires, then Coil Pack, then the IAC Sensor and Throttle Positioning Sensor. If those do not cure issue then it may be fuel related: injectors and/or fuel pump
