no worries... brownies will be a bit thicker (less cake like), you may want to add a LITTLE extra fat (i.e. butter or oil) to compensate for the loss in the yolk. but they should come out just fine.

I was short 1 egg and knowing that the lack of egg would give me a more dense brownie I researched a bit hoping to come across a substitute that I had here at home, I used the 1 egg I had, and approx. 3 TBSP mayo, turned out perfect, you would never guess there was mayo in it at all. However I don't think I would use this substitution on anything other than brownies or chocolate cake....but you never know....
Whatever you substitute, it won't taste or feel the same.
You're probably better off getting on the net and looking up an egg-free cake or cookie recipe.
It won't taste the same but you can use certain amounts of some easy to get liquids for a substitute but I've forgotten what. Try googling it.
You can try some vegetable oil, shortening, or applesauce. Since it is only one egg, if the recipe still involves more, it shouldn't be that big of a deal just to leave one out.

one-third cup of low-sugar applesauce is a great substitute for egg and maintains the fluffy texture eggs provide without the fat and cholesterol

Yesterday I used 4 frozen eggs along with 2 non-frozen ones to make brownies from scratch. I had tripled a recipe. A few days before, using the same pan, I had made great brownies with about 25 minutes of cooking time (at 350). However, with the frozen eggs, the batter had still not set after 45 minutes of baking. Not sure if it was the eggs, but something went wrong. We just grabbed out spoons and starting eating anyway!

You could simply use a normal recipe but replace the eggs with 2 tbsp of cornstarch mixed with 2 tbsp of water, but I don't know if it will make any sort of difference. I have used it with brownies and they turn out the same :)
