Here are some:

In Baseball, if you press (2) on the Wii Remote, you will pitch underhand To go back to overhand, press (1).

Also in Baseball, along with pressing A, B, and A+B, if you hold Left, Right, Up, or Down when pitching, the ball will change directions accordingly.

In Tennis, after you select your characters, when it's loading, if you hold (2), then the tennis court will be blue, like the training court.

If done correctly, after a perfect throw, the ball will roll on top of the rail and hit the red button at the end. You will hear a click followed by the sound of an explosion if that happens. All 100 pins will then fall down. After completing the match, you will also get the Secret Strike stamp.
