Having one great grandparent from a particular culture does not often cause people to claim that culture for their own. You can if you like, and doing so may carry some advantages in some situations, especially in US for economic aide for previously disadvantaged minorities. But if you do not participate in or understand the Latin culture, and were not raised in it, there would seem to be little point in doing so, other than crass personal advantage. Most people claim an ancestor's ethnic identity as their own when they have some pride in it and want to perpetuate some elements of the culture in the midst of a larger group of a different culture.
