Knowledge workers are not generally seen working manual labor jobs that are hands on in duties. For the most part, knowledge workers perform duties that requires more of a mental knowledge while touch labor relies more on physical needs.

A knowledge worker is somebody that is trained to handle certain duties intellectually. A touch worker is somebody that basically provides manual services that do not require much knowledge.
