Puerto Rico is an island, so it doesn't eat anything. However, Puerto Ricans eat massive amounts of pork and pork products, black pudding, rice and beans (chickpeas), plantains and various desserts made out of coconut and vanilla.
The most traditional and popular Puerto Rican breakfast food is Mallorca, sweet bread topped with powdered sugar that is often served as part of an egg, ham, and cheese sandwich. Puerto Ricans would likely also have a cup of cafe con leche (coffee with cream).

The addition of saffron/sazon to the rice. Also contributory is the addition of tomatoes to some recipes. The primary source however of the color is the saffron.
