I once had a yellow jacket type bee nest in a hole in the ground (found it while mowing the grass) , and it a wasn't pleasant experience. Curious as to if they would bother me after dark , i set a one gallon glass container over the hole and started stomping the ground around it , and they came out in the hundreds , ready to attack. So , mowing at night was not an option. I started using a pair of binoculars to look out across the yard for more of this pests and found a total of nine different nests within a week. The trick is to look toward a sunrise or a sunset to see them coming and going in and out of the ground.
In the night, the bees stay in the hive. However they do not sleep. They need to feed the queen and the larvae, they need to ventilate the hive and get the moisture out so they need to beat their wings continuously to carryout these activities. If you listen to a hive in the night, you will hear the hum of the bees.
So my guess would be yes, the only difference is, they arent as active. Have you ever seen a wasp sit outside the nest and stare at you? If so, that is a guard, and im pretty sure they have the same thing for night time as well. They will only sting if they feel threatend, so don't not threaten them or the hive.
Yes they will always sting only it will take them a longer reaction time because of the te patter at night have a relaxing affect towards there body's but they do still sting

Bees do not 'suck honey during night' however if they are ill they are known to lick it up to regain energy.
