Plain cooked pasta should be treated as any other potentially hazardous food. It should be refrigerated within 2 hours or within 1 hours if the ambient temperature is around 90°F. Less time is better.

Food can have bacteria grow on it as soon as an hour at room temperature. Our stomach acid can kill some of this bacteria.Leave food out no longer than a few hours if you do not want to get sick.


To elaborate on the answer above, because cooked pasta is a moist food, it must be treated as a potentially hazardous food, meaning an excellent breeding ground for bacteria. The number of bacteria doubles every hour when food is kept between 41-140. One should not only count on reheating and the immune system to destroy these bacteria especially considering that bacteria leave behind toxins which cannot be destroyed by heat and it is the toxins in several kinds of foodborne illness that cause the problem. Never leave potentially hazardous foods out at room temperature for longer than two hours total.

Yes. Pasta is wheat and cooked wheat will keep better in a cold place. Mold will grow if allowed to remain at room temperature.

Since the pasta has been hydrated, it has now become a potentially hazardous food that could support the growth of pathogenic microorganisms if any are present and the food is left in the temperature danger zone too long. Indeed, refrigerate it - but use it within a few days.

No i don't agree with that first answer at all. I say Less than ONE DAY.

with out anything on it the pasta will stick together. It will get chewy pretty fast. Personally i would not eat it at all stored without sauce on it . Stored with sauce I would eat it only the next day no later.

About an hour before putting the sauces on, but keep it in a cool place with a container on it, it grows bacteria very quickly and will make you sick.
