Live yeast can be used to inflate a balloon if you give the yeast something to ferment (such as sugar). They then produce carbon dioxide as a waste product that could inflate a balloon. You should not expect it to be buoyant, however, for CO2 is heavy as gases go (considerably heavier than air, for instance).

The yeast cannot use salt for much of anything, however.

When water is added to yeast, the reaction creates a gas. This in turn inflates the balloon. Wheither or not the balloon will float, I do not know.

Yeast uses sugar in a process called glycolysis to produce pyruvate. Pyruvate is then converted to ethanol and CO2 gas is given off in the process. This gas causes the balloon to inflate.

the purpose is that when you put the yeast to make bread you put it in the oven on a hot temperature so that the warm water be on hot temperature so the yeast will interact.
