Cartilage is very important for many reasons. One reason is that it is needed between bones to create joints. Another is that in order to make bone, it first has to be cartilage, and then cells called osteoblasts build bone upon the template laid down by cartilage cells called chondocytes.

It can have different purposes depending on where it is in the body. Cartilage between bones acts as a cushion and provide a smoother surface for joints to rub against. In other places it acts as a shaping structure. The tip of the nose and ears are composed almost entirely out of cartilage.
Cartilage keeps your ears their shape and keeps them from hanging really low. Also it is a shock absorber.
