No one really knows.

if you are the age of 60 or over
You die, when essential organs fail.

Essential organs include, amongst others: heart, lungs, brain (cns), spinal cord, liver, kidnes, blood vessels, lymph system, intestins (though you can be fed intrvenously).

Causes for organ failure are, amongst others: trauma (being hit by a car, bullet,...), infection, apoptosis (cell death caused by DNA segmentation) e.g. due to old age or radiation poisoning, intoxication or poisoning, hypoxia, extreme heat or cold, starvation, dehydration, wear and tear of blood vessels leading to bleading and ischemia, blocked blood vessels (arteriosclerosis) -as as in a heart attack...etc. Or a combination of any of these, one causing the other.

In rare cases you just die without apparent cause - heart stops, poit, that's it.
