Via sealed boreholes drilled into the reservoir - permable rocks trapped below an inpervious, impermeable cap rock. Once the gas pressure in the reservoir falls too far for it to push the crude oil to the surface, water in pumped down a parallel well to displace the remaining iol up through the production well.

One point - the oil is not in the crust. It is in sedimentary rock covering the crust.
