Why would you expect to see cells if you looked at a section of a mushroom under a microscope?

Mushroom cells are larger than most plant cells. So if you had a powerful enough microscope, you could see the cells quite well. The same is true for onion cells. In fact, onion cells are larger than mushroom cells. For most cells, you would need an extremely powerful microscope used in science laboratories. For these, you don't need a magnification level as high.

What roles do haploid and diploid cells play in the life cycle of a mushroom?

the mushroom forms from spores that are haploid. the spores form mycelia and then when conditions are right, 2 of the mycelia (hyphae) grow together and become dikaryotic (2 nucluei in 1 cell) according to my textbook it is still haploid at this phase. the mushroom grow as dikaryotic and then the nuclei of the cells on the gills fuse to form diploid cells. Meiosis happens shortly after in these cells. then the spores drop form the wind again.
