some physical differences are:

water is not flammable where as hydrogen is and oxygen aids combustion since it is an oxidizer

It is capable of dissolving a wide verity of substances into solution (is NaCl)

it is in liquid form at standard atmospheric pressure and temperature where as hydrogen and oxygen are both gases.
