Liquids can be separated by distillation because they have different boiling or condensation points. Alcohol boils at a lower temperature than water so the mixture is heated to the boiling point of alcohol and it leaves the mixture as a vapor (like steam) and is then cooled to become liquid again.

In the case of petroleum the crude oil is heated and turns into a vapor. The vapor it allowed to rise in a tall tube (called a cracking tower because it breaks the oil vapor apart), As the vapor rises in the tube it becomes cooler and cooler. Different constituents of the vapor turn back into a liquid at different (cooler) heights in the tube. The liquid from the different heights is captured and drained into different tanks than the other liquids.
