Press Ctrl-1 to open the Format Cells dialog box. Pick the Number tab, then the time, and then Custom and you can change how the time is displayed, like having it show with AM and PM instead of using a 24 hour style. So you can have 3:00PM or 15:00 for example. If you are then doing calculations you can use a custom format to show the hours as a total, to enable it to show above 24 hours, which would be useful for things like time sheets. The following custom format can do that:

If you have Excel 2007 or 2010, you can do a Save As to save the file in Excel 2003, which was the last version that used the xls extension. If you do not have those, you can try Open Office or Google Docs or download and install FileFormatConverters.exe from Microsoft Homepage.
