I wouldn't do this, but the only way to do it is to quit the Galaxy you are in. When you are in the Observatory pause, then select quit. When you've finished saving Select "no" at the question "Do you really want to quit?".
Unless you extracted your save using homebrew and can revert from there, you can't.
Pause the game and select either "Save and continue" to save your progress and keep playing or "Save and quit" to save your progress and stop playing.
