The term "Pekingese" comes from "Peking," which is the name of a place in China. Just as with "Chinese," "Vietnamese," or "Japanese," the suffix "ese" was added to the end to describe someone or something from that region. As "Pekingese" dogs and people became more common in the English-speaking world, it earned its place in the dictionary.
