There are many climaxes in the film but some of the better ones are when Indy is escaping an ancient temple and a gigantic rolling boulder is chasing after him, having a gun fight in the burning bar, running to and away from assassins in Cairo, fighting the large German near airplane propellors, knocking guys around in enemy trucks and recovering the ark and finally having all of the surviving Nazis' faces melt off.

As explained in the recent episode of the Big Bang Theory by the character Amy Farrah Fowler (played by actress Mayim Hoya Bialik), no. Indy adds nothing to the primary plot of the movie. The Nazis would still have found the Ark, they still would have taken it to the island and opened it, and they still would have all burned.The only thing that Indy adds is that the movie is essentially told from his perspective, and the Ark ends up in the government warehouse. Had he not been in the movie, it would have been more of a "cake recipe" rather than an actual story.
