well early humans captured animals with spears and knives so i guess that's enough to capture a mammoth

I think they drove what ever they were hunting into a ditch or a small hole they made previously or either was there naturally then they would throw spears or shoot arrows at it. Also they could have just surrounded the animal (if it was by itself) and again throw the pointy stuff at it (as in spears and shooting arrows)

Mostly meat, like Wild Boars and Fish, but when Agriculture was invented, they stopped hunting so much and ate the fruit and vegetables.
