First of all you need to realize if your mother is having some kind of problem. It doesn't matter what the problem is, if she doesn't have no one to talk to, it does build up inside and for some odd reason who ever is in front of that person might trigger it. And one more reality of life here, it could be that your mother is feeling sad for not having no one to talk to, or the most good excuse older women do have is," Menopause" just imagine what we all going through when we reach a certain age one day, but when it comes to a older man you can call it "middle life crises" Maybe once in a while you can talk to your mother and see how she is doing....

You need to set up other ways she can get their attention when she needs to and you need to limit her time with your children until she can stop yelling.
