On my PS3, you start any regular offline race (e.g. stunt run) by pressing R2 and L2 at the same time. The locations are always intersections and once you pass these intersections, coloured dots are added to you map. You can view the map by pressing SELECT. However, to answer your question. A freeburn challenge is started by pressing RIGHT on the 'cross' (left part of the controller). Find the menu option FREEBURN. Should speak for itself from there on.
Download the update for bikes, then simply select "paradise bikes" when you start the game.
Try removing the memory for the games progress save.
Press start and access the menu, it's on the top right hand side.
First of all, go to the Burnout Store and select "Paradise Bikes", (it's free so you don't need to go to EB Games and get a PSN card) wait for it to download and you have the Burnout Paradise Bikes. If you want to use it then you must be either offline or online in a bike freeburn while playing Burnout Paridise and then go to the junkyard and select "Paridise Bikes". There are two motorbikes to start with: the Nakamura FV11OO and the Nakamura Firehawk V4. You can unlock three more bikes too: the NakamuraFV1100-T1,the Nakamura Firehawk GP Competition (the fastest bike in the game), and the Nakamura Toy Firehawk. I don't know how to unlock the three because I bought the time-savers pack. Burnout Paridise has more realistic car damage, and the race types are really well planned. You can idmediatly go into driving once you start the game. Need for Speed Undercover has more feacures and modes online. It has a greater variaty of cars, and you can do missions. The better game depends on your taste in what you want. If you like destruction and high end fun, go with Paridise. If you want to humilate your friends, and have more ways to earn cash, go with Undercover.

Basically when you turn on the game, you start by the garage. When you are allowed to start driving, click the pause button and then click on load data. Finally press the latest save and that should to the trick.
Delete the games game progress memory (make sure you delete game progress and nothing else, like updates and DLC) and you should be able to start from scratch.

To do a burnout you must start driving and then press A button and turn a direction and there you go! in more simpler words drive fast then turn right or left and press A button.
It should automatically save after you perform anything to count towards your game, things like smashes, billboards, car shutdowns, event wins, and finding drive-throughs. It will NOT, however, save your position in the game, and every time you start up your game again, it will take you to a junkyard.
