Because ions are electrically charged particles that have different chemical properties than their parent atoms. For example, salt is not as dangerous because it contains stable sodium ions, not the reactive sodium atoms of its parent. :)

For the same reason that different types of atoms (boron and carbon, for example) have diffent properties despite only a slight proton change. It's because whenever you change the charge (by changing the number of electrons) or size (in general by changing the number of protons/neutrons) of an atom you change the properties of that atom. A definition of chemistry is finding out how to make these changes happen and finding what happens because of these changes.

An ion is an atom that has a charge, positive or negative, due to the addition or subtraction of electrons. This means that the electron configuration of an ion is different than that of its parent atom.

Remember that properties of elements are largely dependent on their electron configurations because it is the electrons that participate in chemical reactions and determine elements' reactivities. Therefore if the electron configuration of an atom changes, so do its chemical properties.
